I know lots of tunes in Bb, none in Eb. Bb is kinda fun for me.
I use IRealPro. If you are looking for bluegrass there are a number of playlists of bluegrass tunes. Just put them in e flat.
I once learned a tune called "The Foot That Faltered" from thesessions.org in F Dorian, which uses the same scale. I gather that you prefer to learn by ear. I haven't been on that site in years. No idea what you'll find. I really like the tune but it's a jam buster, for sure.
I play College (Sailor's) Hornpipe in Eb, after Winston Fitzgerald. Newcastle Hornpipe - I think it's Eb; sometimes I don't know if I'm in Eb or Bb, and since I'm playing alone it doesn't much matter if I know or not .....
