Ahhh man. I don't have a version recorded but, one band I play with we do a Bluegrass Version of this that's so much fun to play.
We do the intro the same and then speed up to a pretty fast bluegrass beat.
For the breaks we just ride G and Em which is super fun to improv. This doesn't help in your situation but ya got me moving this morning talking about it!

Okay, I'd just play the singing part. That's a whole lot a guitar song. I don't know how I do it but I do have examples upon request. Otherwise, find a piano fake book. Some piano player somewhere has Muzac'd (elevator music) most all tunes. That's why I curtailed my pop tunes on fiddle series. It's too close to elevator music. Audiences connect to vocals and voice, more than instrumentals. (Just my opinion, observation)
Thanks y'all...I like the start slow speed up treatment. I think I can get someone else to sing it so I can get off mandolin, then I can do some filler and stuff on fiddle. I'm thinking I'll try to fit "Blackberry Blossom" into a break somehow.
We're also trying "Layla," (Eric Clapton) but it's already fast. And Charlie Daniels showed how to play fiddle on that, so I'll probably just cover his cover.

Myself, the iconic guitar part, groove that tempo, is one of the best parts; what make it immediately noticed. Why I wanted to learn it as teenager. Can work well on banjo though.
