Nice job Randy. You heard more in that clip than I did. I doubt there's a "real name" for the tune - your title is probably as good as any. Or "One minute of royalty free music." Interesting that its a polka or a schottische, which is probably appropriate for Dodge City at that time.
If it appeals to you that's all that counts.
Yes, it seems the only tune those saloon piano players knew was "Buffalo Gals" and the fiddlers could only play "Turkey in the Straw."
But in this case I think RobBob is right that it was just something the music department came up with to fit the scene. Really just underscoring for the dialogue. I wouldn't worry about a name - if you like it just play it.
I can't listen to the clip anymore because there's a dog barking in the background that drives our real dog nuts!
